Can he be King of Ferelden, and slay the archdemon as well? If he can slay the archdemon and be king, are there are any prerequisites that I'll need, ie hardened Alistair, or certain approval rating?

Yes you can set him up to rule as King, but then refuse Morrigan's offer, and make sure to take him with you to the final battle. He'll take the killing blow then Anora will take over as Queen.

in one playthrough I had Alistair and Anora engaged to marry and rule together, refused the dark ritual and had Alistair make the killing blow.
Later Queen Anora told me how Alistair is talking to her and asking if he's always like that and the epilogue had him making appearances around the country (with no reference to his being dead).
