Can someone tell me how often Health potions drop on Nightmare, depending on how many you carry etc and all that.

A bioware rep said they only drop if your carrying less than 3 health potions. So there's no point in saving them, if you have them.. use em.

If it helps, if you have no health/mana potions or injury kits in your inventory, pretty much any battle no matter how small will give you ~2-3 potions/injury kits. Also, you'll find that random corpses and barrels will suddenly have potions in them.
The drops happen more often for 'boss/lieutenant' characters (e.g. assassins).

Other than that I'm not too sure. I've got up to 8-9 health potions during the course of a quest or two (before dumping them all into storage). The drop rate is a lot less at higher levels but it does still occur.

There's a cap depending on the difficulty and if you exceed that certain amount of potions they will no longer drop randomly until you get lower than that threshold again.
I think it's 4 potions for Nightmare and 8 for Hard.

its not 100% drop chance if you are "empty" but hmm 50% ? whatever if the chances are higher iff you empty or almost full - no idea .
4 hp 3 mana 3 stamina for NM , hard got 2x of that normal probably 3x and so on.
There is no reason to save pots unless you sell them or challange yourself ^^
