If I bought the PC collectors edition of ME2 would the collectors armor unlock on my 360?

It should. At least mine did when I used it. It showed up for both PC and the xbox. Eventually I did get a copy of ME2 for the xbox and after linking my gamertag to my Bioware acct, the Collectors' assault rifle and armor were available to me on the xbox. As was all of the pre-order DLC which is also cross-platform.
