Anyone knows how much fortitude does a rogue need in order not to be interrupted while attacking?

You don't need fortitude.
All you have to do is bump your constitution and armor. In the first act there is a ring which can be bought from the black emporium for 48gold. It has 7% damage resistance and + 28 health. I use it all the time with rogue/mage builds as it negates a significant amount of knockbacks/interrupts. It starts to lose its appeal in act II but by then you can by knockback immunity gear. At this point you only need to increase your constitution when you start to get knocked down.
