Is there any way to make the uberweapons selectable by my squaddies?
I'd just really like to have a playthrough where Grunt has a Claymore and a Rev (or Zaeed with a rev and widow).

Yep. Under this section;
[SFXGame.SFXPlayerSquadLoadoutData]
Replace
HenchmenSpecialWeapons=(WeaponclassName="SFXGameContent_Inventory.SFXWeapon_FlakGun",HenchmanclassName=SFXPawn_Grunt,UnlockPlotName=Tec_GruntShotgun)
with
HenchmenSpecialWeapons=(WeaponclassName="SFXGameContent_Inventory.SFXWeapon_MachineGun",HenchmanclassName=SFXPawn_Grunt,UnlockPlotName=Tec_GruntShotgun)
Edit: Cant recall off the top of my head to unlock them as "Standard" weapons forthe erst of the squad to use though.
edit2: Just remembered, same section, edit these lines and remove the ",bNotRegularWeaponGUI=true"
AssaultRifles=(className="SFXGameContent_Inventory.SFXWeapon_MachineGun",bNotRegularWeaponGUI=true)
Shotguns=(className="SFXGameContent_Inventory.SFXWeapon_FlakGun",bNotRegularWeaponGUI=true)
