I very much agree with OPs sentiments. For me the ME games are adventure games. Not in the sense that they have 1980's puzzles, but in the sense that I'm having an adventure when I play them. As long as I feel immersed in the game world this kind of game works for me.
Both ME1 and ME2 did the trick for me, but with very different means. Successfully creating an illusion of being a starship captain or a squad commander is what mattered to me. I think often the minor features are important in this case. Having to read my email, or visiting the science console does a lot to the immersive feel. Being able to pretend to give Joker a pat on the back is important as well. Checking Liara's locker to make sure her pistol mods are in working condition. (You really have to be on Liara's back with those mods because she tend to get sloppy).
Having a big environment does a lot for the immersion, even if parts of the environment doesn't have much use as game mechanics. Thats why I hope ME3 will have some suitable management elements, some decent paperwork in between missions. I also hope it will have larger areas that encourages a bit of solo roleplaying.
I remember as a kid, some friends and I positioned chairs and used boards of wood to act as starship consoles. Then we roleplayed Star Trek, or Mass Effect or Star Wars or whatever it was we pretended to do. Mass Effect is really just an advanced extension of that.
