What are all the essential spells for BG2?

Ok, forget about that. That is too much to remember. I think I will just ask what to use against whatever enemy I can't touch.

In the mean time, I want to know how to deal with Adamantite golems and Maharajahs in Suldanesselar without having to go through 6-8 potions of extra healing on each encounter.

Tank them with a stoneskinned party member or a member with unusual AC. Use a strong blunt wielder to slay them. Using a FoA+Crom combination and casting improved haste will make them drop like flies. A monk with decent level can solo them without any problems.

As for the general difficulty discussion: well games ARE easy nowadays because they are totally about "fake difficulty" and not REAL difficulty.

(For those who don't know: fake difficulty is a difficulty created by the lack of knowledge about the game and potential options. Once the player knows - for example - what items and spells are good, the game jumps from hard to trivially easy. Good example is Dragon Age, which is among the easiest games I've ever played once I discovered how powerful certain skills are (Paralysis explosion, mostly. 20 seconds of aoe paralysis that's impossible to save against = lol. Before knowing that, the game was actually quite challenging, but after I discovered those options, Nightmare was trivial. )

Weapon specifics belong more in the spoiler forum? For the Iron and Adam. golems, Azuredge and the anti-golem staff you can buy in the Ust Nasta stores make life simpler. For critters with high magic resistence, like rakashasa, the various poison gas AREA EFFECT spells help. And there's always the reduce magic resistance spell, but admittedly it's not very practical when there's five of the critters instead of just one poor old dragon..

IIRC, Rakshasa don't have high MR. They are completely immune to spells of lower-than-level X and e.g. Cloudkill does nothing to them.

I make sure my Mage's have all of the above and Lower Resistance also.  When fighting more powerful foes these spells break down their defenses and assist in allowing your Fighters to inflict damage in the  'close in' fight and also your spellcasters and artillery to more easily 'breach' their defenses.  As a matter of fact, as my party gets higher in level these spells usually are in my "quick spell" slots cause I start using them to break down magical defenses as soon as we meet a foe they're likely to impact. 

As the others say, I'd start with the description and then find your way along by trial and error until you have a feel for when they work best against what type foe. 

The guide I like to use is the Dudleyville Spell Guide.

Improved Haste (+ Critical Strike) + Crom Faeyr/Staff of the Ram

That will give you more attacks, so you'll do more than 2-3 damage per round, but with the 90-95% physical resistance of those golems, each single attack won't do much more than 3pts of damage or so.

Fortunately they don't have much HP, so improved haste and crom/ramstick can drop them quite fast despite their awesome resists.

As it turns out, I did discover another way to deal with Iron and Adamantite Golems that is somewhat cheesy. They can't move through narrow passages. So if you lead them towards one, they just stand there and start twitching. Then my melee fighters can attack them without being hit, provided they don't get too close.

By the way, what are some other ways I can resist Level Drain besides Negative Plane Protection spell (too short) and Protection from Undead Scrolls (too scarce)?

There are a small number of items which provide protection from level drain. One of them is given to you (or aquired by you) in Chapter 3.

The other is a bit hidden. You need to be a bit devious in how you finish a certain quest. You also get this item in Chapter 3.

Until then, keep a couple of negative plane protection spells prepped at all times, and avoid traveling at night, cause that's when the vampire attacks happen. If you have Korgan or another berzerker in your party, then turning on their enrage will make them immune to level drain for the duration.

Level Drain isnt too much of a problem if you have a cleric in your party that can remove afterwards

still a bit annoying, being forced to memorize restoration spells just for that. Especially in SCS2 where Vampires will ignore the immune members and go straight for the non-protected ones.

Another reason why a small party beats a large one: smaller can be easily protected against anything without too much fuss :P

If you have the Level 7 spell Limited Wish -and a character with a Wisdom above 10 to talk to the Dao- then you can cast Negative Plane Protection on the whole party by choosing "I Wish to Be Protected from Undead."

Don't have a lower wisdom character talk to the Dao though- unless you want to get a little practice fighting Vampires...

Undead Hunter Paladins are immune to level drain. You get an Amulet of Power from the Shadow Thieves, this is my approach. Slow will help defeat the Vampires quicker. Then Azurrazor or the Mace of Disruption may take them out in one go.
