I am playing through Mass Effect 2 a second time and I would like to know if I can get another weapon specialty on the collector ship. I selected Sniper Rifle the first playthrough, can I get Assault Rifle this time? I am an Adept.

Nope. Only one specialization per character.

You're stuck, but that's not necessarily a bad thing; the Widow PWNS.

Playing as an adept.

But relax.  Seriously.  The Viper and Mantis both PWN in their own right.  Mantis is just Widow Lite, of course, but hey.

Oh wait, if you're an Adept, you can't get the Widow; only Soldiers and Infiltrators can. You've got the Mantis. Still, not bad.

The Mantis functionally replaces the Widow; it's only less destructive.

On the bright side, you can actually use the sniper scope zoom for long range targetting of your biotic abilities.
If on the PC, you can always edit the coalesced.ini to give you all the weapons, as well as making the "special" weapons normal ones to give to your squaddies.
