You get the achievement for beating ME1 on hardcore as long as you change it before you leave Eden Prime right?

Wrong! You need to change the difficulty before Eden Prime. That means doing it on the Normandy BEFORE you speak to Nihlus. Hope you haven't wasted too much time on that...

You do have up until the end of the Eden Prime mission to change it.
