It depends on how disparate the different endings are. If in one of ten different endings, say the Turians, become extinct but Bioware want to use the Turians in a game set in the same galaxy after the events in ME3, then I think having a canon is quite plausible.

Or they just declare anything post Mass Effect 3 off limits.

Or maybe really far in the future?

That's pretty limiting. I would like to see the world in 100-200 years time. Some of the longer-lived characters could still be alive and I think it would be pretty cool to see how they've changed.

Wrex
Grunt (with bigger hump and head plate)
Liara
Shepard's asari daughter (or maybe Shepard is so badass it will be the first asari male)
And Shepard himself as he's probably immortal with all that reaper tech in him.

When did Shepard get reaper tech put in him/her?

What do you think Lazarus tech was based on?  It's just an adaptation of husk spike technology.

I don't think there is a canon of there will ever be a canon. I will view any Shepard produced by the team at Bioware as yet another interpretation of the Shepard character but never as a canon Shepard.

But stories has to have a canon for it to continue. This is basic classical literacy course in college

edit: Yes its sheaprd final story but they have to declare a canon or else the ME series will be in a stand still

The canon is that an Alliance Marine, LT Commander Shepard, became the first human Spectre, stopped Saren and the Geth from allowing the Reapers to invade the galaxy, was attacked by the Collectors and died, was ressurrected by Cerberus, whom Shepard aided in saving human colonists and defeating the Collectors before going on to help save the galaxy from the Reapers.

That's the canon, and that's all the canon Bioware needs for the universe to thrive.

Mass Effect doesn't have to revolve around Shepard.

If they want, they can just be as vague as possible about Shepard, without ever revealing anything.

There dosn't need to be a canon really, they'll just be very careful not to reference anything that happened in the spin-offs.

Respectfully, I don't think they've said that.  Doesn't mean it isn't true, of course, but if it is I don't think they have revealed it.  If I missed something, though, by all means let me know.  Always willing to hear something else that boosts my in-game paranoia.  Makes it more fun :)
