I plan on having a save for every romance eventually. So far, I've got a Liara, an Ashley/Miranda, and a Garrus.

I romanced Liara because she's a sweetheart and honestly loves Shepard no matter what, regardless of whether Shep shows interest back. That and she finally became Shep's equal in LotSB, and in my opinion that's the best kind of relationship. The fact that, ahem, there's a lesbian love scene in ME1 might contribute to my choosing her as well...

The Ashley/Miranda thing was more an experiment with my especially dickish Dick Shepard, but now that I've actually gone through the romances, I rather like them. Both women are really strong, confident, and focused--ovaries of steel, if you will--and I find that attractive (and both are pretty much on level with Shepard, especially if Ash is gonna be a Spectre in ME3). I also liked that Ashley was just a normal soldier, and her character, in my opinion, was the closest to seeming like a real person I've ever seen in a videogame, faults and all. Miranda... well... Dick Shepard likes boobies. He likes boobies a lot. The renegademance also has some hilarious flirting that actually turned out rather cute in places. (What!? Renegade cuteness?! Blasphemy!!)

Garrus is my favorite, not only because I find him strangely sexy (DAT VOICE), but because the dialogue was too hilarious to pass up. Oh, God. I crack up every damn time. Anyway, I really like that the tight friendship is what comes first with him, and that the whole romance subplot evolved from a half-joking suggestion to "blow off steam" to a gesture of incredible trust in each other. He and Shepard honestly need each other, and not in the wussy Romeo-and-Juliet sort of way--it's deeper than that. They're always there for each other, ready to pull the other's ass out of the fire when things get rough, or if there's no alternative, stick with them to the bitter end. It's a love that surpasses "twoo wub" and sexual desire: it's honest-to-God friendship. What more could you want out of a relationship than that?

I originally intended to romance Miranda during my first game. I found the character of Kelly Chambers so appealing that I changed my character’s romantic interest to her mid game.

If I ever can get past my dislike of femShep's voice, I'm going for Garrus without a second thought, because his dialogues are awkwardly funny. :P

Romanced Liara in ME1. Decided to stay with her in ME2, especially after LotSB. Most meaningful romance so far, I think.

My Canon Shep romanced Miranda. She interested him, the moment he met her. Despite her harsh attitude, he could sense something behind all that. Determined, he broke through it all and saw what Miranda was hiding. Her emotional side. From then on, he instantly wanted to be a part of her life. She is very special to him. 

My Fem Shep romanced Thane. Mysterious, gentle, caring. He's dying but my Fem Shep wants to make the most of what time they have left.  She care's about him more than anything and is is secretly determined in finding some sort of cure for him. She's never going to give up hope. 

Lastly, my third Shep (male) romanced Liara. Beautiful, smart and powerful. At first he thought she only liked him because of the information branded in his head from the beacon. However, as he got to know her more he felt the connection she said they had. She means the world to him and hopes whenever it all ends, that they settle down and have all those Little Blue Children.

My main fshep romanced Kaiden in ME because he was there she really wanted Garrus but said Turian wasn't into anything other then revenge. So she died Kaiden back hands her via calling her a traitor and Garrus became interested so yeah she decided to move on with her Turian crush.

My only mshep romanced Liara because let's face it embracing eternity was so intriguing he couldn't get it out of his head and had to be with her. He was wanting to spend the rest of his life with her but then he too died, he searched the galaxy for her almost blinded by the need to see her and she was the coldest thing ever on Illium it broke his heart. Then Tali said she wanted him to Kelly and it brightened things he also stopped being an alcoholic and now is wanting to spend as much time as he can with her sense ME3 is going to happen.

One fshep never romanced in ME cuz kaiden is annoying and Garrus wasn't available. So when Garrus seemed interested in ME2 she jumped.

Another fshep like the one above had no romance in ME and decided to gamble on love with Thane though she does feel odd that he has a son and keeps talking about his wife.

Interesting. Tali's loyalty mission was the least interesting out of all the missions to me. In fact, I kinda hated it. The only reason I did it in a second play through, and that I'm going to do it in my current playthrough, is to get the ship model for my collection :D

Garrus. He was by her side from the beginning to the end, supporting Shepard and trusting her. They developed a deep friendship that evolved into something else.

Also, a badass being so adorkable is priceless ^__^

James Shepard: Earthborn, Paragade, Infiltrator, War Hero.
Clever, and and cunning strategist. Had a crush on Tali in ME1 and so romanced nobody, then was delighted to find that the feeling was mutual in ME2.

Zooey Shepard: Colonist, 50:50 Paragon/Renegade Split, Vanguard, War Hero.
Friendly and compassionate, but loves battle and revels in the joy of combat. Straightforward tastes. Bisexual. Flirts with most people, but romanced Liara in ME1 and stayed true to her in ME2.

Garrus for femShep. He was always at her side, since the first moment they've met, and since then they went to hell and back together, so it is only logical that they ended up together. My main femShep fallen for him while events of ME1, but just didn't know how to get to him. So, when he mentioned that reach-flexibility story, she jumped on the opportunity. And Garrus was so adorably awkward and sweet, I awwwed all the time.

For manShep it is Jack. I just love her. She is the only reason I ever created male Shepard. She is beautiful, she is interesting, and the more you talk to her the more you see that she has her reasons to push people away and you appreciate her trust even more because of that.She is like a little hedgehog, who is covered in needles, but is all cute and fluffy underneath.

I've done all romances except for Jabob's.

Ashley: My canon Shep romanced her and stayed faithful. I like strong, capable women and Ashley fit the bill. Her flaws and dialogue also helped endear her to me. Her profession of faith and even the cheesy poetry were a nice reminder of Earth in a universe filled with aliens and strange planets.

Kaidan: I have one FShep who romanced him. Kaidan seems very dependable, the type of guy who'd stand by her through almost anything. Except of course what he saw as a betrayal to Cerberus. And the conversation about the girl at Brain Camp. I forget her name, but the story of a lost possible love tugged at my heart strings.

Liara: Mostly meta-gaming reasons. To be honest, she kind of annoyed me in ME1. But I liked her development in LoTSB and so have two Sheps who stuck with her.

Miranda: For similar reasons as Ashley. She's determined and confident, but also with a vulnerable and emotional side. I like encouraging her to be her own person and not remain hung up on her genetic tailoring.

Jack: My least favorite romance. Not to say that it's bad or anything. I guess I wanted to show her that people can be trusted.

Tali: I admire her dedication to her people. Her loyalty mission helped a lot too. I really liked those lines about never having anyone speak for her like that and the ensuing awkwardness.

Garrus: Shep's right hand man for two entire games. It just seems natural. The most funny of all the romances.

Thane: Dark, attractive, mysterious, and all around interesting. I want to find him a cure during ME3.

my sheploo romanced tali she was so popular i was wondering whats the big deal with her, so weird ... had to go for jack ... totally worth it :D

Ash and Miranda.

Like everyone said, they are very confident, but also have an emotional side. For example, I was surprised to see Miranda start loosening up after her loyalty mission, cause at the beginning of the game I found her to ruthless/renegade, which was incompatible with my paragon shep.

Eleanore - She's my canon character. She fell for Kaidan. He was someone who was also a soldier first, who understood that the mission and crew take priority. Sure he had issues, but when questioned about them, he said that he'd dealt with them. And the thing that really got to me was being called out by him about actions having consequences. It really made me feel that here was a back and forth relationship. Sure Horizon sucked, but to be honest, Eleanore felt he had a point. She didn't like being yelled at, or being called a traitor, but she understood the anger, having felt it herself (yes, I'm still cranky about being railroaded). Even though she felt like things have been ended, she had no interest in becoming involved with anyone else. She hopes they can work things out, but the Reapers are her top priority.
James - No romance in ME1. Ash was a subordinate, and Liara's extreme interest was a little off putting. In ME2 he ended up with Jack. While initially frustrated with her attitude, after her mission when the cracks in her armor showed, the person behind the mask intrigued him. Yes, she's very broken, but she's tough. And it's nice feeling like you always know where you stand with her. Where things go from here is pretty much up to her. In the meantime, there are plenty of other things to focus on.
Jane - No one in ME1, for the same reasons as James. She had no interest in romance, but surprised herself by flirting with Garrus. They were good friends and she trusted him. What started as "stress relief" seems to have grown into something more. There's a whole galaxy of mercs and Reapers to snipe, and knowing that there is one other person who gets her world view makes it that much more fun.

I've romanced them all (with about 3 Shepards) My favorites Are Ashley, Kaidan, Miranda, and Jacob. Ahsley and Jacob have a sense of being where Shepard has been (Ashley and Shepard went to the same drill sergreant and Spacer Sheps have a military family like Ashley and AJcob's saved the council on a high risk mission) Miranda and Kaidan seem to be on equal footing with Shepard. Miranda's an outstanding leader and she'sa task master, which makes her the perfect XO for Shepard so she can be left in charge in Shepard's absence. Kaidan's a military lifer, intelligent, and has enough experience to fight side by side with Shepard and even outranks her in Me2 in the Allaince. Also a note on Jacob, he's the only squadmate that (without DLC) let's Shepard vent her feelings and frustrations, which got him major points in my book, plus he says those 3 words which make any romance just take off.

On my (Usually normal pref character shep) ME last playhthough for awhile i dident romance anyone either, except in ME2 i goed with miranda (becouse shes too sexy to not have as a last LI in a final playthrough)

Tali! None of the others even came close.

Sometimes she is badass and strong willed. Other times she is innocent and nervous. While other times she is simply hilarious. All this pact into one well rounded, non schizophrenic, believable character. Her writes are GD rock stars in my mind.

I romanced Liara, because she's awesome and I truly feel like you get the most compassion coupling these two. In my fantasy game, I don't wanna get with a boring human...Especially the femshep choices...Kaiden and Jacob? Sigh...So boring.
If I could, I would get with Tali as well. Because I feel terrible for her and we can see from her loyalty mission how much of a bond she and Shep share. But, somehow Quarians can't be gay...QQ So I'll just treasure the friendship. :P

Went with Miranda on my first playthrough, because I wanted to get past the rough exterior and see what there was inside. While Jack had a similarly rough exterior, I actually find it to be an appealing part of the character in her case.

But for my official playthrough I went Tali, for the same reasons as Someone With Mass.
