I have six canon Shepards, and none is more canon than the others, so here goes:
The Boys:
Devon Shepard, Ultra-Paragon Vanguard: Romanced Liara and stayed true in ME2. Why? Because he loooooves her.
Martín Shepard, Paragade Sentinel: Romanced Liara and then strayed to Miranda in ME2. Why? Well, he just hasn't found the right person yet, and by right person I mean another dude.
Ethan Shepard, Renegade Infiltrator: Romanced Ashley in ME1, then strayed with Jack in ME2. Why? Because there's just too much Ethan Shepard for one woman to handle, that's why.
The Girls:
Simone Shepard, Paragon Adept: Romanced Liara and stayed true in ME2. Why? Because she looooooves her.
Leah Shepard, Neutral Engineer: Romanced Kaidan, and didn't romance anyone in ME2, so technically stayed true to him. In her mind, though, she was just focused on the task at hand, and Kaidan was out of sight, out of mind.
Ashley Shepard, Ultra-Renegade (Psycho) Soldier: Romanced Kaidan, then strayed to Jacob in the ME2, though he later was killed in action. Why? Because aliens are weird and she hates them. Well, except for Morinth, with whom she feels an odd kinship.

For my main character ( paragon femshep), started with Kaidan but switched to Garrus in ME2.
Simple reason, my Shepard would have felt betrayed by Kaidan's lack of faith and trust in Shepard (having turned his back on her and all, refusing to believe in her motivations, etc. By this point, Shep would have had difficulty trusting the new people she's met with a relationship if the 1 person she cared for & went through hell with wasn't willing to trust her.
Then of course she realized Garrus was still at her side, still loyal, still a friend, right from the very beginning - willing to fight to the bitter end if need be. I think Shepard said it best to Garrus in a rather touching line of dialogue:
"I don't want someone closer to home. I wan't someone I can trust." Made sense to me. Garrus never faltered with his trust, belief and loyalty in Shepard, unlike Kaidan.

In ME1 I had a choice between an ugly mutant and an ugly mutant with a squid head. So I chose celibacy.
In ME2 I had a choice between a boggle eyed, fishlipped monstrosity with 2 halves of a small moon sellotaped to her arse, an annoying tattooed ****, and a seemingly nice person.
So I romanced Tali.
In ME3 who knows.

Most of my femSheps have romanced Kaidan and stayed faithful. I found him a refreshing option considering how many character in a rpg have a tonnage of angst going on. For ME2 romances, it's been Jacob since again he's the most stable person on a ship that could probably qualify for it's own DSM listing.
I guess much like in life, I prefer the normal/stable types in a game.

No one so far, which sucks, I just haven't liked any of them. And pisses me off some that we'll have no new ones or at least older NPC's turned into LI's in Three. Oh well...

Well, it's Tali for me. Why? Because I find her very attractive. Her innocence and inexperience in relationships coupled with her roughness (especially with Cerberus and in battle) makes her bloody attractive.

Every available romancable character. why? because I adore romantic subplots and it was fun to figure out Shepards to fit with various LI's. That said, my favorite romance subplot is with Kaidan Alenko, it has everything that appeals to me on a personal level, tough guy with a marshmallow center, just a bit shy, honest and not afraid to hold up his hand and say - wait a minute, are you sure its a good idea, a guy with an understated sense of humor, strong sense of duty and loyalty, someone who can be your rock and your equal partner.

Liara. I'm a guy, so doing Kaiden, kind of weird with femshep. And I don't like playing as femshep, it doesn't feel right not being my masculine self. Ashley is a racist and believes in God. Both turn offs. Liara, cute, subtle, and easy to talk to, though she can be nerdy, but in a cute way.

Still no guys. Jack is to manly looking. Samara refuses to romance, though I would be interested in her. Miranda is TOO self conscious. Reminds me off some of the people at my high school. Well i have three canon shepards. I fell connected to each of them for different reasons.
- Tyson Shepard- Was initially attracted to Ashley, but then saw her more as a sister. Liara was more of the, exotic, type so he was interested. stayed loyal all through ME2 and plans to see this out to the end.
- Maryse Shepard- She never felt compelled to mix love with work and knew she had way too much baggage for someone to take.. that was until she met Thane. She has no intention of cheating on Thane, even if he may be a dying man.
- Leon Shepard- He was always a very straightforward type of guy, and he felt that Ashley was too. So he decided to break all the Alliance rules and start a relationship with her. Despite their heated (not the good kind) meeting on Horizon, he knows the girl he loves is down in there, and wont leave her alone until shes back.

I went with Liara in ME1. She was soft kind understanding and upfront with her feelings for shep.
Ash beat around the bush to much, was kinda racist, and a little too religious for me. Still a great person though.
In ME2 Liara had moved on and wasn't there for me when I needed her most, but Miranda was.
For ME3 I'm sticking with Miranda and Liara and shep will remain close friends.

Well I romanced Kaidan because there was no one else and because Joker is ignoring me and Ashley never gets throught Virmire. She is - I´ll go with racist and religious (sorry).
I think there is no one I really liked in ME1only those I couldnt have and Liara is just to much fanboy-speculation for me.
So in ME 2, I decided I am going to stay single because Joker is still ignoring me, Thane is constantly weeping, Jacob is Jacob and Garrus is just best Bro ever ( I would hate to spoil that beautifull friendship with romance).
And Jack I dislike her,so she was dismissed straight away. Tali is my cute little sister and Miranda. Hm I never cared about ass, because I am sucker for a smile soo. But her romace writing is good. Maybe I will try her someday. For ties with Cerberus.

Tali for me. I just like the way her romance turned out. Wish you could talk to your LI more after romance though, its great that Tali though sex was worth it. However I wanted more of the "cute" and tender moments that led up to it.
