My main male shepard romanced Ashley in ME1 because she wasn't that weak, naive sterotype of woman and she wasn't overly cocky she has a well balanced personality. She maybe a little xenophilic but that what makes her interesting. I don't mean bash on Liara or anything. but Ash was a bit more interesting than Liara. and beside I viewed Liara as more of a best friend than an LI.
Then my main Shepard in ME2 romanced Tali because after horizon it felt like there was zero trust between ash and Shepard and that it made that feel that she didn't trust you at all turning her back on you like the council did to you. Tali, Garrus, Wrex, and Liara had more faith in you than Ash did and that something. Tali had that 'I-will-follow-you-down-to-the-depths-of-hell-kinda' feel the kind of loyalty I can't help but like her.

Mass Effect 1
I was a Liara fan. Her personality appealed to me the most. I also felt that my Shepard connected more to her with the "mind linking", and her seeing what Shepard sees with the visions. I dunno I just felt that she really knew what was going on and best supported my Shepard.
Mass Effect 2
I enjoyed Liara in Mass Effect 2 and LotSB. I found her character arc satisfying. She has a bit of Mary Sue in her, but who am I to judge.. Commander Shepard's middle name is Mary Sue. After I had played LotSB I went off to try the other romances. I found Miranda's to be very very good. I approached it as a rivalry turned romance. I started off by sassing her, and I loved how she sassed me right back or stood strong on her beliefs. While other squadmembers seem to bow to you or ignore you. Miranda truly felt as an equal. I had no idea what the renegade interrupt did on the "you jealous talk" and then the "stop smiling damnit" response was golden. I was hooked at that point. She has become my favorite character and romance now. I also like to add to the "drama" by playing as a Soul Survivor. Adds a bit of uniqueness to the relationship. Worst enemies turned lovers.
Right Now
I've been playing Ashley's romance since I finished finals. In truth I never gave her romance a fair shake. I've always liked her character, but never really went into her romance in depth. It has been better than anticipated. I expected to like her more as a friend than romance, but she has a well written one, and I intend to make a save for her in ME3.
So I guess right now I got three canon romances on three different Shepards. If I had to pick one I'd pick the Miranda one.

I've only played as FemShep so far. And I have only romanced three times.
Kaidan on my only playthrough on ME1, mainly because I saw something like that coming between the two characters and played it out.
ME2 I imported on my first play, romanced Garrus. Kaidan just kinda made my heart break, even if he's not mentally sound in anyway, it still hurt to hear him so against Shepard. This playthrough I did the romance by accident, but was giggling at the thought. But I understand why Garrus rejected Shep, and it only gives me more love to his character than that of Kaidan's.
Second playthrough, no import, I renegaded (for the first time) and I romanced Thane. I rejected him in my first playthrough and felt bad, which never usually equals a good relation. I haven't quite finished this one, mainly since this is the first time I've played a Biotic. My usual tactic of blowing everything up is replaced with slow, but safer one. Hope I get back to playing it before the next game comes out, so I have two different plots to try.

My main CanonShep romanced Jack- she needs to be loved more than the other romances, and I personally have always been drawn to the "broken people" much moreso than the "normals". My FemShep romanced Garrus because of shared idealism and loss related to that. I love the romance scene mainly because they both have visible scars- I think the visual speaks a lot to the underlying connection.

ME1 - Kaidan, but just because I liked the movie-like love scene, since I find him a bit insipid and stiff.
ME2 - GARRUS!
because:
- dat voice!
- his personality
- his loyalty to Shep (she knows she can always count on him)
- he's incredibly, strangely, sexy and attractive
- he reminds me of the lion-man Vincent from TV-movie 'Beauty and the Beast'

Could have sworn I posted here before, but I have not.
I've tried all the romances for myself and found that the human romances and characters were the better options. Ashley is probbaly the toughest woman in the series and I love her for it. She's witty, has a great sense of humor, and will put downa Krogan to protect her Commanding officer.
Flip side to Kaidan. The man's got experience and he's insightful and caring. He cares about Shepard alot and he means alot to her in the romance and it shows.
Miranda, is possibly the one squadmate and LI that could be an equal to Shepard as a soldier and person. She's incredibly intelligent, skillful, an outstanding multitasker and tactician. She's also mature and beautiful and she knows what she wants.
Jacob is in a class all his own. I'll admit, I only tried his romnce to hear the infamous priiize line, but DAMN did I get more than I bargained for. He didn't dump his problems on Shepard, he didn't go on and on about possibly the wort thing to happen to him in his life and handled it on his own. He asked Shepard how she felt about everythig that'd happened to her (I had to reread the subtitles to make sure I heard what i thought I heard) and he said "I love you". Oh and obviously you could grate cheese off of his abs.
Jack's was a surprise to me as well. seeing as you can have a one night stand with her or make her wait for the sex in an adorable love scene that had me on the verge of tears. She goes from abrasive and mean to loving and cute and I adore that.
Kelly's was cute too, I missed it a few tiems because it can only be completed after teh SM and only if you saved her. The Email and dinner were nice and her dance was a pleasant surprise. She reminds me of Pepper pots from the Ironman movies since she's Shepard's personal assistant.
I did enjoy Liara's romance, especially with the addition of LoTSB and Thane's had an emotional love scene. Garrus could have used a little less talk of his men after his LM as it ptu oe moff a little that he was still mentioning Omega before hopping into bed with Shepard. Tali's also felt...forced. Especially since everyone went out of the way to tell me "oh dude she's got the biggest crush on you" especially after I called her on being wrong about the Geth in ME1 and she never wanted to talk to me, just tell me about the quarians and the migrant fleet. I mean She's 25 and it was on borderline school girl crush territory.

I've tried Thane and Garrus, but I ended up reloading. My main Shep misses her best friend Ash

I have 3 main shepard.
Leyaleen Shepard. She's an Infiltrator, war hero, stellar, pure parangon. My main character. She dated Liara very seriously in ME1. In ME2 she was tempted by Kelly but refused to cheat on Liara. They got back together after LotSB. They now share an eternal love that will pursue in ME3. I really hope they'll both surive :/
Kate Shepard, adept. She didn't date anyone in ME1 because of her renegade attitude. But she will be tempted by Garrus in ME2 (it's not done yet ^^) because it's new and exotic and it will allow her to nourrish the dark side of Garrus. Will probably be faithful in ME3 if Garrus accept to continue dating shep, but she really is an unpredictable woman and can find herself bored at any moment.
John Shepard, Vanguard. The "default" one. He's a neutral guy, even if it means missing a lot of opportunities. He was really attracted by the personnality (especially the defaults) of Ashley in ME1 and saved her on virmire only because he had a crush on her. When he met Jack in ME3 he thought her attitude was challenging. Even if it's not a good base for a relationship, it worked out pretty well. John is secretly enjoying the idea of Ashley confronting Jack, which will probably happen soon.

I romanced every female option. So I have playthroughs for, Ashley, Kelly , Tali, Miranda, and Jack all ready for Mass Effect 3. I even have a special Samera playthrough, just in case you can romance her 100% in ME3. Why, do you ask? I found all the females attractive in the their own way. I like Ashley Williams the best, but the rest of the female characters each have something special about them.
