The hell? I'm dead certain somewhere someone said that there would be an option in the menu where you could select if a helmet would be on or off during cutscenes / dialogues.

There might also be some bandwidth issues. And maybe it's too much of a pain in the ass to convert the program they use to make the alien faces into a slider thing.Someone With Mass wrote...
I think the co-op wouldn't have any use for the CC, considering that we wouldn't see their faces so often as Shepard's.

But they still could have just ctrl+c & ctrl+v'd it in to MP.
My interest in playing humans just went from very little to non-existent.

And I play Shepard in the singleplayer, so I don't really see the point in it either.

Shepard talks, shows emotion, etc in SP. You don't see that happening in Co-op.
Therefore what point is there to have it in Co-op? Where the goal is just kill/ complete objectives?
At least that's how I see it.

That too. It'd more than likely just be a pretty static face.
And if they bring in a geth later as a character in the co-op, I won't even look at the human options.

This. It would drastically increase load times and also bring problems with goofballs bringing offensive content into a game where people are at least trying to be serious.
