The the Academy classroom area, where you can build your golem and fight others, is there a way to defeat the last golem "Maiden"
Tried about 10-12 times now and lost every time.

She's tough but beatable.

There are two ways to go about it.

(1) The classic Method. Swift Legs, Shocking Arms, Weather-resistant Torso, Scorching Gaze Head.
Always use a Pristine Spirit Essence (you'll get it back) and max out your INT and Crafting skills before building (didn't you find some nice gloves somewhere?). You probably want to let Safiya do it if you're not a Wizard. This will get you a good chance of winning the final fight, but still less than 50/50.

(2) The Black Draconic Method. Cheat the hell out of it. Enchant your golem extensively before the competition. Barkskin, Stoneskin, Bull/Bear/Leopard or Cat/Eagle Abilities, Heroism. And many more. Since Energy Immunity (Acid) and Haste can be added, use the Stout Legs and the Galvanized Torso instead. I also use the Weighted Arms for the damage bonus, which helps against the Maiden more often than the shocking, and knockdown is always fun.

I should note that the classic Method used to work almost 100%. This changed with one of the patches.  To cast on the Golem, right-click it to make it your target, then click the spell icon.

Yep. Cheat, cheat and CHEAT your way to victory. (It's Thayans, so they're probably cheating just as hard as you are!)
