So.. I was going back to ME1 to make a new character, however i have to breeze through it because i cant wait to play ME2 again (yeah, i like ME2 more than ME1). So i thought, "What would happen if i transfer my save from ME1, but i still miss some assignments?"
Sooo... What does happen? For example with Gianna Parisini...
What if i dont complete all assignments in ME1?

It depends on what assignments you do and don't do as only some of them have an effect on ME2.
If it is your goal to do the minimum number of assignments in ME1 for the maximum effect in ME2, you can look look here: http://masseffect.wi...e_File_Transfer

Naw, i already have ME2, completed it like 6 times, but on the same character. I know basically the game in my head, but still, i dont know what it is like to meet someone in ME2, whom you have never met in ME1...

Janus gave you the most comprehensive list available with regards to the import thing. But as clarification if you don't meet someone in ME, then there is no follow up in ME2. For example, Conrad Verner does not show up in the default game in ME2.

There is a bug concerning Conrad Verner, but the point of my example still stands insofar that if you don't meet him (i.e. do the mission line involving him in ME) then he won't appear in ME2. Conrad Verner does not show up in the default game in ME2 (seemingly pure Renegade and skipped all optional missions).
If that example doesn't take your fancy then it's also true of Helena Blake. You don't do the mission in ME, then she doesn't appear in ME2.
The point I was making is that if you don't do the missions in ME then you won't meet those characters in ME2.
Also, if you do the missions and they're dead then that's a different matter for obvious reasons. I believe the only scenario where you don't meet a ME character and you do get to see them in ME2 is Nassana Dantius.
