Meeting devs would really be cool, and some video interviews or some such available online for those not able to attend would be great. It's always interesting to see devs directly answering fan questions. Giveaways would also be neat, online and at the booth. What I also really like to see at a booth is some sort of photo opp interesting prop sort of idea. Like to maybe make it more clear by example, at my local con (The Calgary Comic and Entertainment Expo) the 501st and a few other Star Wars groups have booths, and they have stuff like props, figurines, artwork, Star Wars related stuff that the average person can't afford to personally own. I've seen other booths have cardboard cutouts of characters or things like that to take your picture with. Maybe if you had something related to concept art or other things used in creating the game it would be cool to see, in my opinion. Or a big cardboard cutout of Shepard with some squadmates with a hole for your head, I'd love getting a picture of that

Part 2.
I love watching all the 'behind the scenes' stuff. I especially love interviews/questions. Developers, writers (if not included in the developer category) and voice actors.

I've only been to one convention and that was an anime convention. The things that caught my eye for booths were the overhead displays so you'd gotta come up with something that catches the eyes quickly to make people want to come over that way. I was gonna say something like cutouts of characters like Liara and Garrus to pose next to and take photos (then giveaway), but I imagine there will be a lot of people packed and walking around so there isn't much room to place displays on the floor (unless there right next to the video monitors).
Signed swag is always nice (paragon/renegade stickers to anyone who visits, character posters, copies of signed concept art, art made by the artists, t-shirts, wristbands, hats). I can agree with everyone here that speaking to the devs in person or conducting a small q&a in a separate private room would be awesome. For at con giveaways, you could setup a minigame or scavenger hunt (paragon/renegade related) , or a trivia game to win swag at random. It doesn't hurt to have booth babes, it'd be really cool if one was dressed like an asari commando, though I don't know how possible that'd be.
As for outside con, I'd love to see all the pre-e3 booth setup. Maybe you could setup a Bioware E3 Youtube page and post all video blogs there. A live stream would be cool too though I wouldn't be able to tune in the whole day and you'd probably run into broadcasting issues. I think twitter will be used for every current happening at the con while facebook would be used as a summary to the events/main focus at the booth so I'd like seeing an informal video with the guys at the booth saying hi to everyone who can't be there. I've seen things on Youtube giveaways where they choose a random subscriber who commented on the video, maybe you could work on something like that and give away bags of swag from there.

Part 1
When you visit a booth at a Con, what do you want to see?
I usually can't make it to cons, but if I did I'd probably want to:
Chat with devs
Get a look at some stuff like concept art, and maybe story outlines
Get free stuff
Part 2
If you can't be at a convention (because, let's face it, not everyone can fly to Seattle or Cologne or wherever), what do you want to see about the convention?
Video is always the best thing to have. Video interview with any devs at the con and video tour of what's at the booth.

What's up Chris. Good luck on the convention
1) Dress up like the characters in the book. I can imagine, it's already crunch time, and you may not be able to do all of this, but maybe some of you can wear N7 gear, or Cerberus staff gear. Maybe one side of the table can be N7 and the other can be Cerberus.
2) Bringing actors into the fold- While many of us can't be there having Seth Green, Martin Sheen and Keith David would be a big plus to be there. They could do interviews, blog about the events, anything.
3) Mock Omni tools. This goes back to staff wearing N7/Cerberus gear but that would be cool.
4) Hot chicks dressed as Asari wouldn't hurt either lol.
5) Giving out promo gear such as the shirts, badges, hats.
6) A sweepstakes to get some of the ME comics to people who attend and can't attend.
7) A chance for your named to be mentioned as a character.
Good luck!

This is probably completely impossible but hey...
Get Yvonne Strahovski, if she's willing and schedule permitting, to be a "booth babe" in costume as Miranda Lawson for something like four hours after you do your thing on stage. Who knows, she might even do it pro-bono for the sheer fun it
The photo opportunity in magazines alone... seeing her like that. Wow. Might want her to do a photo shoot before the show and then CG in computer Shepard next to the Yvonne for the store standee!

While I wont be attending anything it would be nice for the (new?) site to be updated with a new character or species feature. Similiar to the vorcha and Thane reveal for ME2. Otherwise a video showcasing a new world (like for ME2 with illium) or a new character (like the intro video for Mordin).
Obviously a new gameplay video is what everyone wants, but it is the universe, with all its characters, worlds and races that is what I like most about the series, so seeing what is making it into ME3 is what I am most excited about.

I've pretty much wanted to go to comic-con since I first heard about it. (bout when I was ten-give or take a few years). Since I'm one of the ones who doesn't really have the cash to put forward for one of these things - like a bunch of others, i'm sure -
Something appealing to me is a lottery/ prize drawing for a trip out to one of these things. (grand prize?)
That's something I couldn't pass up. Ever.
If not that, mabye a live video feed - Prize giveaways that go with it as the event progresses > I've been meaning to get one of those "Deadliest Son of A **** in Space" shirts for a while now, and/or one of those mini SSV Normandy ship models. Those are as good of prizes as any. I'd hop on that in a heartbeat.
And as fun as blogging and twittering is and all... I think live video feed will be best.
If I was there:
Posters- Litographs mabye.
Shepard's Armor/ Guns/ Etc... - Something to take a picture with.
The comic books - signed?
A developer that knows his way around the game
Life size Legion - or geth. that would be sick.
And lastly - Casey Hudson. I'd like to shake his hand and just say "good job."
(I know what you said about demos BUT) I'd really be interested in the game engine. The Witcher 2 surprisingly impressed me. I'd like to see what Bioware has up it's sleeve for Mass Effect that's going to gain my affection. It doesn't have to be an actual demo, pictures maybe, a description, just something I could look forward to.

I cannot attend any convs.
For me the most interesting would be video interviews (youtube channel)of game devs and voice actors and such, background info. If there is some gameplay video that would be cool too, but mostly I'd like to see vids or read blogs from people intimately involved with the game.

I really wish Bioware would open a booth at the Calgary Comic and Entertainment Expo; its not that far from Edmonton and there are many Bioware fans here. ofc it's in a month, so I'll doubt they'll open a booth, but dammit I can dream ;~;
Anyways: What I'd like to see at any booth, especially a Bioware one, is merchandise. I cannot buy from the online store since I don't have a credit card, and it is difficult for me to get a prepaid large enough for the purchases I want (When tallying up, I usually need at most 100, and I can't justify that large of an amount to my parents.) Lithos, shirts, figurines, hard copy soundtracks, anything would be great. Also perhaps a special item, like maybe a signed art book. Going back to the CCEE example, there was a limited edition art book available only at the con with covers done by special artists. Hell, even a Bioware lanyard would be awesome.
While already released trailers would be good, to draw attention to the booth, Bioware has released many good games, so perhaps gaming stations where people can play for up to half an hour. This allows a company to attract new interests, while reliving some old ones.
Going out of booth territory and to event, some form of autograph session, panel and/or photo session would be amazing, dev or cast. I would love a picture with Gaider or Priestly. Meeting devs would be awesome, to answer questions and shake hands, hell even give hugs if we're lucky. While having the cast there would be a dream, I doubt it would be feasible since there still needs to be work done on ME3 I'm going to guess. (I would love to give a glomp to Brandon Keener, but I think I'd be hauled away be security if I did) Still, any form of meet and greet would be amazing to attend.
Contests would probably not be feasible because of the length of a con and the amount of cons being visited. Perhaps if a contest for a prize was held for two hours or at most a day for both days, since some people can only attend a con for one day before they have to head home. I don't think one for some special oppertunity, like having a character named after someone or some sort of playdate with the devs, would be feasible since you'd be touring conventions and having that sort of thing would just be cumbersome to co-ordinate.
Other than that, I don't really use social networking sites, so I'm stuck either way ;~; Twitter and Facebook updates would be good for people though.
When going to cons though, please say hi to volunteers! We feel so left out since usually only executives meet special guests...though for good reasons I guess -cries in a corner-.

Well, a giveaway would be nice, like a T-shirt or something.
Or you could get us a live stream to E3 somehow, that would be pretty cool too.
But whatever you choose, i'll still love you, because Bioware is the best game company the world has ever known.

I would like maybe something similar to what Lucas does at Comic-Con. (Have a big screen playing awesome trailers or clips, props or things used while making the game(s), or having the artist that drew the concept art, and having them sign the art and sell them, etc.) Also maybe exclusive free hand outs for attendees (in-game exclusive DLC or even throwing out free t-shirt or two) Anyways, I hope to see you guys (Bioware) at Comic Con this year!

Combat mechanics are obviously going to get a strong focus in whatever trailers you guys show, but I want just as strong of a focus on customization, both weapon and armor. Show your gamplay trailer with different classes tackling the same scene and with Shepard's of the same class using weapons with different mods.
Also, show off character customization in the trailer. Show us how it's improving.

Drinks with the developers. I'd love to take you guys out for a round and maybe a bite. I'm sure the marketing/PR guys would have a nightmare with this (because who knows what info you'll spill when drinking), and there are probably some things that the legal team would cry at having to handle, but for the community it would be awesome.
If that isn't possible, then meeting devs and swag sound good.

I live in the wrong country for all these things, but I would say make sure there is a live video link for the booth, and have like a youtube channel or something you can link to on the forums with all the major events filmed, like interesting talks, maybe any unique gameplay vids from the booth etc

Haven't read through all replies but thought I'd chime in. I'd never ever go to a convention because.. well honestly thats kinda too geeky for me. But what I would like to see is something akin to what the Creative Assembly does here; http://www.totalwar.com/videos
There are lot of videos which reveal a bit about the proces is made. So I'd like to see videos like that. Something which reveals a bit how much time is put into making the superb music there's likely going to be or perhaps something about how the writting process works.

I've been to many a convention, the most recent being San Diego Comic-Con last year.
The best game booth experience had last year was Microsoft. They had real devs (not just community managers) running the Halo Reach stations, and Cliff Bleszinski was even there for Gears of War 3.
At EA, I don't want community Managers talking to me while I wait hours in line. I don't want to chat with Chris Priestly or Stanley Woo. Both are too snarky and low on the totem pole, as pretentious as that sounds. I would rather talk to Casey Hudson, Jesse Houston or Christina Norman, three people who have all been simultaneously more courteous and more responsible for the franchise that I love.
Every good booth gives away swag. Bungie, for example, gave away little code cards for the Noble Team Avatar Helmets. This seems like a small thing, but the lines at Comic-Con are so intense, it feels good to get a little something to take with you besides a fond memory.
