Ok, got my 50 sovereigns. Got my maps. I talk to Bartrand and he tells me to go get Varric. I talk to Varric he doesn't acknowledge anything about it. Yeah...bit of a problem.

I don't know that you need to have a conversation with Varric, so much as take him with you. Add him as one of your 3 party members then return to Bartrand - you should be able to trigger the "let's go to the Deep Roads" cut scene.

Get Varric into your active party and go speak to Bartrand.

Well if it's any consolation, on my first run I went to the Hanged Man to use the party thing to pick up Varric, went back to Bartrand and discovered that I had actually forgotten to take him, again.
