Lore is the genetic therapy. You don't see too many poor people in space. Apparently its expensive to travel.

Seriously though.. I find Adriana Lima to be virtually flawless.  That doesn't mean I don't find fat-ish women attractive as well.  If you have a pretty face, you are at an advantage, and can look stunning regardless of your weight.  I guess you're SOL if you're face is unattractive.  Haha jk.  seriously though, fat girls need love too, and I have no qualms about giving it to them.

They're probably just not physically fit enough for space travel, so we don't see any of them while we're traveling the galaxy. Maybe there will be a whole bunch of them on Earth in ME3 though.
