I admit I do not know how the consoles work but I believe what you have done is simply register the game to your EA account, which... doesn't really do anything (makes you eligible for EA technical support? I don't know). In other words, it does not affect your game's ability to upload data to this site.
The UPC code should be 12 or 13 (13 in Europe and Australia, I believe) characters long, and when it says "you do not need to include dashes" it really means "don't add dashes." I don't know if the error message for a used code is different but that might also be a problem.

Yes, it's showing its ugly side right now. For what it's worth, I'm sure this will soon be solved; it's just unfortunate that it's such a core part of the website (but it should work in the latest Firefox, Chrome, and maybe Opera).

Achievements are stored separately and therefore show up much faster -- often almost instantly -- than character data. That they do not show up is a good indication that something is preventing the console from communicating with the servers. The character you do have is made with the CC, yes? If you check
Player Profile -> Screenshots in the game, what does it tell you about storage space? You are supposed to have 4/100 files (characters take 4 files, screenshots 1).
Since Dec. 3rd. the site is supposed to display the Xbox Gamertag/PSN Name currently associated with the BioWare profile, for people with more than one of either (it should also show on the
code redemption page). Can you see this, and if so, is it correct? Obviously you do have a working EA account but in addition to making sure that that account is associated with your Xbox Gamertag you need to make sure that Xbox Gamertag is associated with this site (does your husband play on the console under a different account?).
Also note that there is a known bug specifically with the Xbox version where it simply fails to upload anything. This is a game bug and must be patched. AFAIK, there is no easy way to tell whether you're affected by this or not.
