I persued a romance with Alistair up to 100 (love), and then broke it off with him. I did this by saying we "need to end this" and then something along the lines of 'we don't have a future' and it ended. He didn't lose any approval, just went from (love) to (friendly).

Then I persured Zevran up to 100 (love).

Buuut...

Even though the relationship with Alistair was over, during the talk with Morrigan on the eve of the battle she mentioned me as the "woman he loved", before mentioning me as Zevran's beloved also.
I also had the option, when talking with Alistair of the ritual, to say that I loved him. He responded confused and said "I had wondered, after all this time..." and then changed the subject.
And finally at the gates of Denerim I had the option to tell him I loved him again.

Is this a slip-up in game? Did the romance not end cleanly, and the game regard both Zev and Ali romances as going on at the same time? It doesn't seem like it...
and I mean, it's perfect for me, intended or not.

It's just that in a previous playthrough, when I broke up with Ali by being forced to choose between him and Zevran, this never happened?

There is a flag in the game called 'Still in Love'. I can't check at the moment, but I believe that once you get an LI to 100 (Love) there are places where breaking off a relationship ends the romance but not the NPC's feelings for your character. Thus you will still get responses like you have been seeing.

As for your breakup with Ali in another game, was he at 100 (love)? I can't check the coding of the conversations right now, but there are probably some places where ending the romance doesn't trigger 'Still In Love'. I just know that the flag exists :)
