Purple or Green though I'm guessing Green because it's more "neutral" and Purple would instigate controvery of some variety for not being "manly" enough.

You have to remember the colors isn't just for the menus, but also in battle. The color will probably be blue. It might return orange, but I highly doubt it.
ME1- Blue for a dark and mysterious story
ME2- Orange for Cerberus, the last hope for humanity
ME3- Blue or gray- depending on how the outcome of the game may be, it will probably be one of these two, gray for nothing left after the reapers, or blue because everything is better the classic way
