It's not an energy blade. It's probably omni-gel manufactured into a solid object that merely looks translucent, like an Engineer's Combat Drone. It could also be a suspension of non-Newtonian fluid suspended in a mass effect field like Grunt's Fortification ability. All it would take to have a temporary knife in that instance would be to have a sonic pulse running through the construct at the right frequency to keep it completely solid for the duration of its use.
Either explanation is completely within the lore, and the Codex entry about it will no doubt mention that it is practical because it is nearly impossible to "disarm" a combatant of a military omni-tool, and a modern soldier is going to need a knife too rarely to bother carrying one.
Now this is a decent explanation. I'm not totally happy with it, such as why it's still orange, or why it's less efficient to carry a few centimeters of metal than use all that omnigel and the power needed to turn it into a blade over and over again. But it's several steps higher than "because it's Awesome!"

And one of the big complaints I've seen about DA2 is being able to perform blood magic in front of templars and not get a reaction.
Some people simply have different priorities in their games.
Which still falls into gameplay-story. Almost like arguing the mechanics behind the 'Warp' skill.
But one of the things I liked, at least with the first ME game, was this even though the science is different from the "real world" it at least tried to keep itself consistent. I liked that. It showed that Bioware went that extra effort like you said.. Now it seems to be degenerating from "sf" to "scifi" to "syfy"
Hmm? Extra effort? If I recall, they were justifying their gameplay mechanics, nothing more. That's how video games tend to work; gameplay first, story after. Mass Effect was really no different. All Bioware has to say is 'scientists invented it' and suddenly it's consistent with the Mass Effect universe. I also don't recall Bioware saying anything about extra effort. Mass Effect is simply space magic, no more, no less.
This isn't the thread for it, but I saw that demo too. It's not Miranda-bad. But it's a catsuit. Especially compared to Kaidan's armor.

And I find the lightsaber designation all-too appropriate, and not just because TOR is being done by Bioware too. As I said earlier, the blade looks exactly like a spiked omnitool display. Which is a hologram, and thus light. Make it look like a metal blade, and maybe I can revise my opinion. Maybe.
It looks like a 'spiked omnitool display' because it essentially is a spiked omnitool display. Casey says pretty much this. It's still not as lore-defying as you are making it out to be, based on Mass Effect's premise, where holographic technology always played a role. That's the issue with the Firefly example; Firefly is down to earth, Mass Effect is not.

But good magic systems (be it magic or science fiction) still operate on rules. "scientists invented it" is nothing more than "a wizard did it" At the very least they would have to explain what it is they invented.

Let's take this one to the Ashley's armor thread.

Holographic technology has played a role. As computer displays, as interfaces, for communications. Holograms don't cut people, however.

But I want to see what the Vanguard does. In hope for a badass biotic punch.

Obviously Biotics would not be using their omni-tool as their biotics is enough.
Not sure that makes sense at all to me, unless Shepard has a blade hidden under his palm like in Assassin's Creed.
Anyone else thought about this?

A metal knife can be detected, confiscated, lost, and broken. Omni-blade apps can probably get through weapons checks and can't be permanently destroyed.
It's still orange because combat drones are usually still orange? It's a construct created by the omni-tool. Why wouldn't it be the same color?

Looks cool. I still hope they have/show us the biotic and soldier version, and I'm with anyone else who thinks Soldiers should have an actual knife they pull out and shank bad guys with.
Though it might be impractical if your unviersally carried omni-tool and can be a knife, it'd look more badass and fit the minimalist-tech and biotic-less Soldier class.
But mostly it'd look more badass.

Seriously, there are any number of lore-appropriate explanations for the omni-blade - you're just nitpicking, without even considering all the possibilities.
I mean, I grew up watching Star Trek, picking holes in its canon at least once every episode, and even I don't have a problem with this.
