i dont think they mentioned her because she's so plot relevant. she's one of the hardest characters to kill off in ME2. so theres that.
she was deeply involved with cerberus and is now not. i think they havent talked much about her simply because talking about her would delve into spoiler territory pretty quickly. like talking about legion for before ME2 came out.

My guess is she will help you confront the Illusive man and Cerberus at some point in the game. She's one of the few who know the location of the Illusive man and probably has a great deal of knowledge of Cerberus too.
Also, on the gameinformer hub, one of the articles was a Q & A with Mac Walters I believe. Someone asked:
"Where is the Illusive Man physically located during the course of Mass Effect 2? What’s going on with that colorful cosmic display outside his window?"
Mac Walters answered with:
"The colorful cosmic display is a clue to the location of the Illusive Man, which I can't reveal. Not yet."
To me, that sounds like there's a good chance we'll find out where that is and possibly go there at some point. And who better to tell us than Miranda?

It'd also make sense since all squadmates so far are LIs (I've heard Vega is support to be one, too?) and that would mean that except for two (Jack and Thane) all LIs were permanent squadmates which makes it easier to have the same level of closure for as many relationships as possible. It would even make sense NOT to have Jack and Thane as permanents and instead give them a "tragedy" ending since Jack isn't really a people person and Thane...well, he can practically count the days he has left to live. Please, Jack and Thane fans, don't hate on me, I'm just speculating here.

I think capture and torture/experimentation is quite likely. TIM is a vengeful man, and Miranda is the Cerberus agent the player is likely to care about. I don't like the idea, but I'll reserve judgment until the game is out.

More than likely she will get out of captiity kill the Cerberus agents and meet up with Shepard just as he starts making his way to her.
Shepard: Miranda? I thought you were captured?
Miranda: Oh its you...your late
Or perhaps she will save Shepard from a sticky situation:D
