I totally understand Inu - if I could express what I'd like to see personally? I think alot of fans are really wanting to see Bioware just show off some of the stuff promised. We obviously need to avoid major spoilers as much as possible, but there's nothing wrong with them having a few of their E3 demos showing a few minutes of "So here's an example of some of the new skill branching" or "Here's a new SMG we've added and a couple of the mods you can expect to see..." - I haven't seen anyone here demanding major showings of everything as much as people just want to see some of the meat behind the action now. Show us the return of the RPG elements they've been teasing about for so long. Doesn't have to be everything [better not be everything - we need some tidbits down the road damn you] but it needs to at least solidify fan validation by tending to that.

Another point to take into consideration is that some developers purposely remove dialogue options or choices altogether and other elements from Demo builds, either because they aren't complete, the voice actors haven't recorded those lines, or to make the demo move faster.

Not that this is necessarily what they did. But it's a possibility.

notice too that Legion, Mordin, and Wrex voices are completely different from ME2

Were they? I've got to say, I'm very bad at voices. So I wouldn't have noticed so long as it had some of the same elements.

I saw that too but I don't think that’s an indicator that the whole game will be like that. Its a demo and they are only really showcasing the combat right now.
I’m hoping they do show us a bit about the dialogue and NPC reactions to different approaches later. Surely that is a selling point for this sort of game? And I hope they got rid of the paragon / renegade speech system from ME2.

whats wrong with the paragon/renagade system?

Snowball effect with the charm/intimadate speech options, encourages you to pick either paragon or renegade and stick to it rather than mixing and matching opinions and traits. You could get around it for the most part with the class evolution, the points buffer from the import and the death mask( I think that was what it was called) and most things were solvable without charm or intimidate you just wouldn’t get the good result but I still dislike it immensely. Hell I dislike the whole paragon and renegade system full stop but it was much more annoying in ME2. Just my opinion on the matter.

How much of the new RPG stuff can they really show? A confrence consisting of "Look, this skill branches into two skills more than once!" and "Look, if I add a scope to this assault rifle, the assault rifle gets scope!" sounds kind of short and boring. Another press confrence about the promise of having deeper relationships with non-love interests would contain a mountain of spoilers that fans don't want to see before they play the game.

They don't need to have the entire thing dedicated to it but they could show it to you when showcasing other things at the same time, just showing you a bit about how the classes play differently and what skills you have available. The variety of weapons you will and then show you the before and after when you equip certain mods. It doesn’t need to be all menus and no action to showcase this stuff; you insert it in amongst the more exciting things like combat.
Many people want diversity in play style, customisation and a reactive world but perhaps finer details like these usually aren’t nailed down or finished to a standard they would be happy showing by this point so they may not want to show it because of that?  I don't know.

There were really cool moments of 'non combat scenes" such as the little kid in the vent, (I loved that)

That scene made me flash back to the "duct rats" conversation with Capt. Bailey, even though it's on Earth.
