What 'she' means is that the Asari make no distinction between male and female. While humans come to expect certain things from either sex the Asari do not, in other words all they see are Human, Salarian, Krogan and not male Human, female Salarian and female Krogan. As a matter of fact, Liara is not female, since her species is monogender... Male and female means nothing to her people. She even says that in the original ME, on the Normandy.

Garrus is talking more during the skirmishes with Cerberus in the EA demo with Jesse Houston than he typically did all game in ME2.

Definitely. I think both Dragon Age games were superb in that regard, they really put a lot of thought into how each character would interact with the other characters.

Except I would be disappointed if they took all of the squad dialogue out of cutscenes and poured it all into the banter during exploration/combat.
One of the best squadmate-dependent mission scenes from ME2 was Zaeed's reunion with the Blue Suns commander (during Garrus' recruitment)... if Bioware squeezed a short, unique cutscene for every squadmate into each main mission, it'd definitely make replaying each level much more rewarding.

I kinda assumed that was because they wanted to demonstrate how the shields work against Shep. Being a demo, n'all. I did have to think about that a bit first, mind you.
And I really want Garrus to say, "Callibrations, COMPLETE!" when he does a head shot.

I was laughing so much I almost got my Shep killed there =) I love banter. That is something I really miss when playing ME and ME2. They got so much great banter in DA:O and DA2. I will be very very happy if they bring banter to ME3
