I don't remember Zevran ever explicitly indicating he likes women better.

I don't remember that he did either - but it's the impression and feeling I got from speaking to him.
The gist of my point is that it would be nice to have a male bisexual love interest in ME3 who doesn't exclusively have history with women.

Actually he does. You can ask him "What is it you fancy?" and he
goes into detail, and says, "Do I prefer women? Yes." and goes on to
talk about how he likes the curves of a female.

Thank you! That was probably what I was thinking of.

A 'legitimate' homosexual/bisexual/heterosexual character is a character who's sexuality is not determined by the gender of the player character.  It's a character who is gay, straight, bi, not a character who is because you happened to pick to play a certain gender.

Does this work for other things too, like race/morality?

If I roll a pretty evil male Dwarf and romance Morrigan vs a good-aligned human male, doesn't she have different general preferences based on the PC in each case?

Wait.. people are saying "Now that we've seen Vega" ... where / when was this? I'm outta the loop and freakin out here people! :?

Lol, Vega can be seen on the "Alternate Appearance Pack" part of the Collectors Edition page. Chris Priestly confirmed it was indeed him.

Oh.. that old thing? Bleh.. too low res to make out his face in any meaningful detail. <_<

Here's hoping they do this well. I understand that the idea behind DAII's fiasco was equality, which is all well and good, and I can see how "subjective sexuality" seemed like a good idea in the development process, but it actually offended me more than the absence of same-sex options. Basically, it suggested to me that sexuality is not relevant to a person's character, and that's so, so wrong and also deeply wounding to me as a (proud) member of the LGBT community.

This is exactly what I'm trying to say but not saying too well, thanks.  I'm definitely not against the forward progress Bioware is making for the LGBT community in the media.  I think the inclusion of so many same sex options in DA2 is amazing.  The thought process behind it is what concerns me.

I think the problem with Zevran for me was that it was clear (imo) that he preferred women, even when you were playing as a male warden.

Zevran was bisexual, which is an existing sexuality and also deserves representation.  He and Leliana were very well written bisexuals, especially compared to the DA2 mess.

Not a good road to go down.  "It's an existing sexuality" road gets you to the point where everyone demands represented,  heck,  last week someone demanded Asexual relationships represented by cuddles.  That'll get you furries,  Dominatrixs,  Submissives,  and all kinds of other things.

Honestly,  they should be making the character's personality and sexuality fit together,  not trying to cram in as many different relationship options as possible in order to sell extra boxes,  like they did with Dragon Age 2 where they made pretty much everyone Bisexual out of laziness and for extra sales by being "Trendy".  The whole point is to tell a story,  not try and fit in anything you can think of to grab a few more sales from another demographic.
