Remember:
Salarian - technology crap
Asari - diplomacy and art crap
Turians - army crap
Humans can easily take the Turian place in that role ( it has been proven)...

The turians have the largest military in the galaxy and the largest navy in citadel space. Humanity still has an economy much smaller than the turians which means we have a smaller industrial base to work from than the turians. Of course you could argue that everyone's economic infrastructure is going to get wrecked by the reapers but since our own homeworld is going to get wrecked we will be in no shape to takeover for the turians if they get wiped out.

thus my reason for not abandoning them. although i'm pretty sure. their military is going to take a beating

Otherwise, in this order (assuming that we mean 'homeworlds and general populations of them', discounting races like the Keepers, Vorcha, Drell, etc):
-Yahg
-Batarian
-Raloi (sorry guys...)
-Volus
-Elcor
Then we get into the real stuff:
-Krogan (yes I do not value them much, sorry Wrex)
-Hanar
-Quarian (I like em, in fact I like pretty much all the races, but if I had to choose..)
-Geth (I have geth fetish, shush)
And now into the core races:
-Salarian
-Turian
-Asari
-Human (pfft, have to look out for our own)

So in a rebuilt galaxy, I'd want to see the following still alive:
Humanity
Asari
Salarians
Krogan
Geth
Quarian (if possible to keep the peace. Han'Garrel and Admiral Xen, anyone?)
The rest can go down Dodo Lane. (Might save the Turians if their leader isn't a complete jerk like Councilor Quoting Claw.

Because the greater good isn't by itself an evil or benevolent goal. Its the actions towards it that are.
Humans also are resilient - those that survive will probably adapt, and carry on. Eventually reforming what was lost. I don't believe other races are that versatile, they're too old and too set in their culture and ways. Finally, if Shep sacrified another race, the remnants of that race would forever despite humanity and other races would turn an eye of distrust to humanity. For humanity to be sacrificed, no race could then ever say we didn't give our all for everyone else.
You may begin hating....now.

Humanity
Turians
Asari
Salarians
Geth
Quarians
Vorcha
But if I had to sacrifse a few races I would say:
Batarians
Drells
Hanars
I really don`t like the Batarians.
