I'd let the Turians die... They are badass, but their role can be taken by the humans...
Remember:
Salarian - technology crap
Asari - diplomacy and art crap
Turians - army crap

Humans can easily take the Turian place in that role ( it has been proven)...

Since Batarians are first on the Reapers way than my dislike for them is appeased.
Otherwise the Geth (never ending source of desk lamps for the entire galaxy ). Quarian Empire shall rise again!

The turians have the largest military in the galaxy and the largest navy in citadel space.   Humanity still has an economy much smaller than the turians which means we have a smaller industrial base to work from than the turians.  Of course you could argue that everyone's economic infrastructure is going to get wrecked by the reapers but since our own homeworld is going to get wrecked we will be in no shape to takeover for the turians if they get wiped out.

thus my reason for not abandoning them. although i'm pretty sure. their military is going to take a beating

If Batarians or the Volus aren't an option, then the Krogan or Quarians, as neither species are contributing much to the galaxy.

Definitely the Volus.
Do the Vorcha even count? Can they do calculus?

I'd like to see a squad made up of Blasto the Hanar Spectre, Shifty Cow, The "Biotic God" Volus, and an Elcor riding front line with Commander Shepard and the Normandy. Fricking epic!

I'd sacrifice in this order: Yahg, Vorcha, Batarians, Volus, Rachni, Drell (basically dead already), Hanar, Geth, Elcor, Quarians (also dying, but not as much as the Drell are), Salarians, Turians, Asari. Not sure where to put humans in that list yet.

If it came down to it, I would sacrifice humanity. Because if we just save ourselves then everything the Bartarians, Turians, and the Council were saying about us is true.

If we have to choose a major race(by major i mean like the turians) to abandon for the sake of the galaxy who would you choose?

i have to go with the asari

So between humans, turians, quarians geth, slarians, asari and Krogan I assume.

If it was just the 3 other Citadel Council races, I'd pick Turians actually.

Otherwise, in this order (assuming that we mean 'homeworlds and general populations of them', discounting races like the Keepers, Vorcha, Drell, etc):

-Yahg
-Batarian
-Raloi (sorry guys...)
-Volus
-Elcor

Then we get into the real stuff:

-Krogan (yes I do not value them much, sorry Wrex)
-Hanar
-Quarian (I like em, in fact I like pretty much all the races, but if I had to choose..)
-Geth (I have geth fetish, shush)

And now into the core races:

-Salarian
-Turian
-Asari
-Human (pfft, have to look out for our own)

From my understanding, we'll have missions similar to the ME2 loyalty, only these ones are for the entire race. We can lose their allegiance, and thus that that entire race.
So in a rebuilt galaxy, I'd want to see the following still alive:
Humanity
Asari
Salarians
Krogan
Geth
Quarian (if possible to keep the peace. Han'Garrel and Admiral Xen, anyone?)

The rest can go down Dodo Lane. (Might save the Turians if their leader isn't a complete jerk like Councilor Quoting Claw.

Batarians. I'm sorry, but nothing says "we're the least valuable race in the galaxy" like "our reputation consists of slavery that makes 18th century America look like paradise, pirates, terrorism, unimaginable cruelty, and arrogance. But we have good hospitals!"

I'd sacrifice humanity.

Because the greater good isn't by itself an evil or benevolent goal. Its the actions towards it that are.

Humans also are resilient - those that survive will probably adapt, and carry on. Eventually reforming what was lost. I don't believe other races are that versatile, they're too old and too set in their culture and ways. Finally, if Shep sacrified another race, the remnants of that race would forever despite humanity and other races would turn an eye of distrust to humanity. For humanity to be sacrificed, no race could then ever say we didn't give our all for everyone else.

You may begin hating....now.

If I had to choose then I would save these races:
Humanity
Turians
Asari
Salarians
Geth
Quarians
Vorcha

But if I had to sacrifse a few races I would say:
Batarians
Drells
Hanars

I really don`t like the Batarians. :P

Well, I think the obvious answer has to be getting rid of the Vorcha or Batarians first or Geth first (Geth especially since you can't really commit genocide on a machine race, not as long as you've still got the blueprints). If those aren't considered major, though, the asari.

Seriously, **** the asari. I'm so goddamn tired of space elves.

vorcha, batarians, volus then quarians. and to all those saying humanity should sacrifice itself to show our nobility... go volunteer at a homeless shelter or something. I prefer being alive to being noble.
