To make things clear I am talking about the Volus, the Elcor and  the Hanar

In ME 2 there were clearly not enough of them, the Hanar were completely absent and I can remember talking with only about two Elcors

I think the Volus are still humanoid. Just shorter and fatter humanoids. But I agree, I miss the big stupid jellyfishes and you can never have to many monotone aliens.

The Keepers aren't sentient and there is enough of the Geth in ME 2

I want more of them, both sexes, and more varied voices. I'm sick of every one of them sounding the same. At least they looked slightly different in ME2, from what little there was.

Bah! They are. Or at least were.
If the Reaper's process of "repurposing" a species assumes blocking it's consciousness, then you may conditionally call them insentient.
