Character creation, always liked playing around with it and seeing what others have come up with.
Workbench, hated the cluttered inventory of ME1 but found ME2 lacking with its weapon upgrades.
Audio, heard BW teamed up with DICE so I can't wait to play the game with a decent headset.

I like how I can choose to focus what aspect of an ability I level up, such as;
Combat Mastery ---> Influence/Damage
...as opposed to the automatic and shallow system in Mass Effect 2.
While I miss the RPG elements in Mass Effect 1, they were very sloppy in design. This looks both deep and fun.
Otherwise, as said before, The Reaper Noises. They sound fantastic. They're actually scary again!
I never thought they would recover from Harbingers mind numbing taunts.

Not only did it solidify that this team's actually implementing our suggestions (more emotionally connected Shepard, would love to see a child, etc.), but it heightened my hopes that they might finally be taking the development of Shepard as a character more seriously.
