In ME1 Infiltrator is almost a Soldier with Tech skills. Once you have unlocked AI hacking then it is almost a complete Engineer too if you take it as a bonus power. ME1 Infiltrator allows great flexibility in companions since you don't have to take a tech along and is powerful enough you don't have to drag a "Soldier" along either. My last Infiltrator run was with Ashley and Wrex, mind you I DON'T play on levels above Hardcore and usually it is Veteran, because I hate how they increased difficulty in ME1.
Engineers are late bloomers in ME1 not really getting strong until mid 30s level. Once there they are almost untouchable because they can disable almost the entire battlefield. Between AI hacking and Dampening which increase the size of your explosions and reduce the time between them you are constantly hitting everyone in line of site with disabling powers. It was not uncommon for me to walk into the middle of the battle area and just tech spam and blast until everyone was dead late game because nobody could touch me.
ME2
In ME2 they play totally different, in Infiltrators have stealth and a bit of tech. The Infiltrator is mostly a combat oriented class allowing either easy sniping or stealth movement around the battlefield to blast with a shotgun to the back of the head. Engineers are the ultimate distractors and disablers. Engineers play more like a caster class in ME2 while the Infiltrator plays more like a "ranger" class.

Infiltrators (+AI hacking bonus power) are much better than Engineers in ME1. Seriously, it's not even close.

If you've unlocked AI hacking as a bonus, the only thing that an infiltrator won't have that engineer does in Neural shock. But you gain medium armor and immunity. Infiltrator is the way to go.

Just play all the classes. Period.
You can't ask for what's better and such, every class has its appeal and can be playing like a gamebreaker in both games.
And there are plenty of guides around (check the Mass Effect Wiki) for both ME1 and 2.

Still, infiltrator is a solid recommendation for a first tech character.
If you end up liking tech powers a lot, it makes sense to go back and play an engineer at some point. They rely more on those powers than infiltrators do I would say, simply because infiltrators do more damage and have better defenses.

Infiltrator was my first full game run, (to 50 then two more to get 60) Still hold a pretty special place (meaning it's one of my three 'cannon Sheps') and while ME2 Infiltrator doesn't quite feel as equal to ME1, it's still a fun class there too. Just have to either let squadies die or get frustrated by them since they can't stealth with you.

While both have their pros and cons, such as long range combat and etc. I will always play Infiltrator. I blame the new Stealth cloak. It's got me addicted to the class hardcore now.
