I don't like ME1 as much as ME2. ME1 is full of chores. It's the typical "Hurry up and save the world but do these bazillion other things too" type of game. I haven't been to ferros or novaria yet and I have a ton of assignments to do. It's a total abuse of my inner completionist.
So, what do I really have to do to play the story? Are the assignments all that important? Must I turn over every rock in the galaxy to get the story outcome I want?

Mostly the stories don't carry over to ME2. The one where you are asked to kill the crime bosses does, Bring down the sky choices, Conrad verner does, flags for the Consort and trinket, Flags for romance, how you treat people on Feros, Flags for Asari deplomacy(kill asari diplomat sister), flags for helping Tali with geth data, how you treat Wrex(survives or not), Garrus, maybe a few others, in which you can check with Wiki on. The main thing they give you is XP and money. The only required ones are the main plot worlds Feros, Noveria, Liara recruitement, Virmire, and endgame Ilos. If you talk to Wrex enough or look up on the wiki Wrex's mission he will survive Virmire, otherwise it will depend on your Charm/intimidate score.
Ignore all collection quests, they are a pain and other than money and a little xp are worthless, with the exception to the find the keepers, which has a flag.

There are going to be over 1000 choices affecting ME3. Just because they don't affect ME2 does not mean they won't affect ME3. I would do every mission, every assignment except the collection ones. If you are planning on importing the Shepard from ME1 to ME2 to ME3, I would do everything possible in both games.

There may be 1000 differnent choices but unless they have buried the data deep in the saves that the average editor can't see, then there aren't that many from ME1. You can go get a gibb's editor and open a ME2 save and look what has flags and what doesn't. And just because it has a flag doesn't mean it shows in ME2, like the Consort Trinket quest. I don't think they would go to the effort of burying the data so deep, when why bother, I just think when you combine a choice made in ME1 with the alternates in ME2 it adds up quick. One 2 option choice can bloom into four different outcomes with ease in ME3 after having it in ME2, and could go as high as 6 with ease if they wanted.
If you want to see the flags then try this editor and look at an ME2 save, or create one to see all the ME1 flags...

If you are playing on Xbox, don't you have to do a certain number of missions overall to get the "so-and-so sympathizer" achievement? (If the OP cares about that)

as some devs said on the old boards, play ME1 and do some side quests, as they will be some that carry weight, not just cameos. You can assume the major choices you had to do will carry over, also some little ones also will impact 3, even if they did not impact 2.

I feel the OP's pain..., however this is the price we pay for an RPG. Not sure which side missions really count, but there are a few that turn out to lead to significant plot segments.
If the OP can manage it, I would suggest taking a few deep breaths and then go do them all.
In the end do it your way... it will end up being you personal game not mine, or others. If it isn't fun, skip it.

Personally, I love side-quests, micromanagement, the whole nine yards.
But Leon is right. Games are supposed to be fun. If you are not having fun, don't sweat it too much.

I have this same problem when it comes to the Collection Quests. I absolutely hate them, but my inner completionist almost forces me to do them everytime. All the other assignments I find to be enjoyable in their own way..
The collection missions however add at least 2 or more hours of mindless mako driving.

I like the side quests because I like fighting. My ruthless renegade Shepard let's nothing get in his way. Plus there are some decent upgrades on some of the quests and I want to gather all the experience points I can to make it to level 60 in 2 playthroughs.

Most of them show up in some capacity, but in terms of the big ones, I'd do the Cerberus missions, Asari Diplomacy adds a little extra dialogue to Thane's recruitment mission. Doing both of the Asari Consort missions (including the one with the Elcor), and then going to the ruin on the planet with the pyjaks transfers to unknown effect in ME3, so I'd hit that one up too just in case it does affect something.
The Armstrong Cluster's Geth Incursion, though tedious, helps Tali identify you in the beginning of the game too. Also, getting Wrex's armor makes it easier for him to live on Virmire
