My absolute essential would be that their is some sort of absolute event generator where you can not only choose every mayor choise from ME:1-2 but also the smaller ones.
I imagen if you don't poor it into a story this would be really easy to make and if bioware doesn't add it some fan is sure to make one.

A happy ending. That is both happy and an ending. None of this open-ended, 'let's plug the next one before we even have it conceptualized' nonsense like DA2.

An inspiring story that demoralizes you while giving you just enough hope to continue on your journey in battling the reapers. A story so wonderful that when I look back at the Mass Effect Trilogy years from now, the only thing I'll be able to do is smile.
