During the Nintendo presentation, Riccitiello spoke and had shots of main EA franchises, including Mass Effect. He was voicing his support of the Wii U, so does this mean that the Wii U will get at least ME3? 

At first I thought why? But then I thought about using a touch screen and having all your powers available right in front of you without the power wheel being need to bring uppowers that weren't warp or overload.

Knowing EA, it's probably going to happen. However, I don't expect it to come out before early 2013 or so. Think of the PS3 version of ME2.

Doubt ME3 will go on it but maybe a game based in the MEUniverse. I have heard countless times that the MEUniverse wont die with Mass Effect 3.

I don't think they'll get Mass Effect 3, but I can foresee some sort of spin-off game thrown to their way. After all, it would certainly be a good way to get a jump on the next Mass Effect game after Shepard's arc is finished.

It might not be exclusive, but it would probably get some features exclusive to the Wii U's interface.  Something akin to how Mass Effect 3 is getting "unique" features for Kinect.  But no doubt it would be available on all platforms, PC and all.

Makes sense. I think it goes without saying if they ever did bring a new game to the Wii U that it'd be mandatory for it to be released on the other consoles as well.

I could see ME being ported. It would probably use the controller for your radial menu and hotkeys.
