Much as it pains me to admit, I understand why they didn't show anything after the ending of the Reapers. There's just too much that would be personal to each Shepard for them to satisfy any significant portion of the fanbase.
I think what the endings should have done, and what the EC should do, is leave the characters in a state that allows for interpretation and follows from the narrative. For example, in having Shepard and the Alliance rescue the crew of the Normandy you could show a reunion scene with the LI (if it's an ME2 LI, then maybe a different reunion scene on Earth) and have a scene where Shep/LI talk about making good on the plans they discussed earlier in the game. So, for Shep/Liara that would be settling down and having kids. That would still allow the play to imagine how they like: where they settled down; how many kids they had; how their relationship went; what work, if any, the got upto; how Shepard coped with the war; how they addressed cultural differences, etc.
What the endings did, and what I'm worried the EC will do (if they have Shepard die on every ending), is they left the characters in a situation where none of those futures are a possibility. Which is why we were all so upset.
Besides the characters, though, I think it's possible to give more concrete explanations on what happened to the various species, fleets, council, Citadel, relays, etc.
