From what I remember of her description of the union, physical contact isn't necessary, and given the degree of intimacy that the union ostensibly creates, I tend to imagine that what we would term 'sex' is viewed more casually by the asari.
That said, the question you raise about whether the asari have sex as we understand it, is interesting. It's a bit anthropocentric to assume that their anatomy is the same as a human female's, or that they have a concept of physical intimacy that is similar to ours. (For what it's worth though, I don't personally view sex as an act requiring participants of opposite sexes, but that depends on how an individual defines sex, I suppose).

- Sha'Ira only has sex with Shep when he/she indicates that her reward is not enough
- The Asari stripper in Samaras Loyaltymission and her refusal to have sex with that turian
- Samaras refusal when Shepard tried to kiss her
It's quite obvious that they view sex in a way very similar to humans.
Regarding Liara there is nothing that implies that she had sex before ME1, on the other hand there are some things which suggest she never had:
- She is a pureblood and not happy/proud of it (any teen-interactions with other asari very unlikely)
- She isolates herself from others (she tells Shep that it is a reason why she likes digsites like Therum)
- Her behaviour, especially her weak social skills (in ME1)
Additionally Kaidan comments on Liara beeing 'bookish', which pretty much includes 'not interested in casual sex'.

No I don't think she was ashamed of it but like anything that could have caused torment or bullying when young it's clearly uncomfortable for her to talk about. I always got the sense that the mere mention of the word really cuts her, brings up a past that she tries to put behind her.

I honestly don't care about her relationship and sex history either way and it's something I don't even bother with in my headcanon. I do think it's somewhat more likely, going by my interpretation of her in-game dialogue and behaviour, that she never had sex before Shepard. But I'm not going to chew anyone's head off for suggesting otherwise, I think there's enough ambiguity for different interpretations.
