Like you I have also skipped the demo but from what I understand all classes except soldier can wear 2 weapons without suffering longer cooldowns on abilities. I hope this is the same for squadmembers because, if ME2 is any indication, a squadmember with only a pistol (anti armor) or only an smg (anti shields/barriers) isn't going to be too useful in combat. I hope I can simply equip Liara with a pistol and an smg and she can still use her abilities all the time and I'll be one happy panda 
Not entirely, all classes has a certain amount of cooldown I think it is +100% (so your powers basically recharge twice as fast as normal without weapons) each weapon you equip subtracts a certain amount from that, different kinds of weapons subtracts more, I think that it runs Pistols/SMGs, Assault rifles, shotguns, sniper rifles. Heavier types of wepaons subtract even more so a widower subtracts more than a mantis sniper for instance.
I think a pistol or SMG costs about 30% so having both would subtract -60 and give you a total of about +40% cooldown. I think a shotgun is somewhere about 80% if I remeber correctly etc.
When you gets below the 0% cooldown into the negative the powers takes longer to recharge than normal, in the demo where you have one of each weapon equiped as an adept the cooldown is nearly three - four times as long as normal.
At least this is my belief judging from trying the game.
However Gerrus in the demo had both a sniper and an assault rifle and had fairly guick recharge so perhaps squadmates follow their own rules?
