I used gibbed editor (this tutorial is for f!shep but you can do it with Sheploo's textures as well):

The only problem I had so far, is half of Shepard's right ear being black, though. I just roleplay this being a comunicator of some sort until there's a fix for it.

Although I got it working without using the hair texture. The result is not perfect, but at least he looks different from all the other Shepards I had.
