It appears that Bioware does want to continue the Mass Effect franchise so Liara with her long life span is an option, along with the other asari & krogans. I would prefer that Shepard continue but given all the variables, highly unlikely. But for now ... waiting on ME3!
Note: Liara would only be 300+ which is typically not even a maiden. That starts around 350 years as a rule, although it can start a little earlier if the asari melds frequently.

If Shepard survives ME3, I hope they do like Robin Hood and show the last moments of his/her life. That ways we can see that we won the day, Shepard is a hero, but his/her chapter in the Mass Effect series is OVER.

Which just made me realize the one biggest reason I vastly prefer Mass Effect over Dragon Age.
No Chantry. No Templars. Reason rules, instead of religion. The universe is clean and bright.

However Bioware decides to close up the story, I think Shepard's ending should mostly be left up to the player. I'd rather it be open to interpretation and not be given rigid exposition from Liara or something. That just kills RP-ing for me.

The best I got is that maybe they don't want the new starting or "leading" squadmates (who are always human) to be s/s and would rather it be for characters most gamers (of the opposite sex to that character) wouldn't see anyway. That would help avoid catching fire from the mainstream audience.

If it was solely Vega in case of male s/s LI, then gay players wouldn't have a single romance that would provide any kind of a trilogy experience. But it's basically confirmed that there'll be both new character s/s LI (Casey's "Some game sites saying 'previously straight chars now available for both m&f chars' not necessarily true. Will have some new LI's in #ME3" tweet) and Kaidan at least (Raphael Sbarge's statement at the Albuquerque Comic Expo) so I don't think we even have to worry about it. I agree that Shepard's story should be left ambiguous, perhaps with the Normandy flying off into the galaxy if we survive. Pinning it down too much without player input would be not ideal.
I also don't really like the thought of Liara narrating from a few hundred years into the future, although a scene with her immediately after the invasion's end talking about the reconstruction of the galaxy would be nice.
As to who will be the S/S romance if it's only new characters? Probably not Vega. If the Kaidan 'confirmation' is false, I'd expect there'll be another new character of some description.
Patrick Weekes (@patsquinade on Twitter) has been tweeting a lot recently about writing in dialogue for new characters. Ditto for Mac Walters, the lead writer - he's been planning the romance dialogue and scenes.
