As for it not being mentioned more after....Hendel's character has been quite well-established by then and it's not particularly relevant to the plot. Neither is anyone else's sexuality once Jiro's cover is blown, which is why theirs aren't brought up constantly throughout the novel either.
I still maintain the stance that Hendel's sexuality is ambiguously gay at best, and a joke at worst. Like Prietor Gavorn, his sexuality is only brought up in a humourous and arguable context. Kahlee's implications read as a running gag, and it boarders on offensive.
I cannot wait for my male Shepard to be openly gay in ME3. I want to take the heterocentric, lesbian-exploiting universe and scream, "GAY MEN EXIST, DEAL WITH IT. A GAY MAN IS GOING TO SAVE YOU FROM THE REAPERS. DEAL WITH IT."
