You don't always get a "nice" option in real life, either. Some people are just not going to be happy when you say "thanks but no thanks". Anders is a wackadoodle, he's a freakin' abomination. I'm not surprised he stalks away in a huff when you give him the brush-off. If he were to suddenly become Sane Reasonable Guy in that scenario, that would be out of character.
I must have played a different DA2, because at the point where I had to turn him down, Anders was only partially wackadoodle, and the only responses available to his moderate come-on were "I don't want you thinking of me like that!" and something else that I don't remember. It felt harsher than it needed to be, given how the rest of the dialogue went.
The man had just gotten the Hawke family into an ambush that resulted in the Hawke mage killing dozens of Templars in the Chantry. No small thing not to mention Anders revealed himself to be an abomination. I thought the Hawke line was very realistic.
