This is all we "know":
1 gay only crewmember with an important role on Normandy. 1 lesbian only crewmember with an important role on the Normandy. Romances are much more meaningful than Kelly in ME2.

ME2 LIs are probably not going to be bisexual.

ME1 LIs - no real indication either way.

Can't say the exact lines at the urge of another poster, but there is definitely a higher chance that Vega is an M/M option after reading another bit.
