It has been said on the ME1&2 Joker romance thread if I remember correctly.
The flaw I see with this reasoning is that while Seth Green may contribute with written or improv dialogue he is still being paid to act out a role. It's his job to pretend. Though I personally don't see Joker being interested in men, attributing Joker's sexual preference to Seth's personal lifestyle is a weak basis for argument, in my opinion.
ETA: The reason I am skeptical that Joker would be gay or even bi have to do with his typical straight guy remarks. Like phantomdragoness said, the "take pictures" comment along with the female porn playing over the bridge speakers and him commenting on Morinth being lithe and sexy lead me to believe that he's strictly into the ladies.

Or this could all be the rambling of someone who's main M!Shep who's been a lonely gay man (in-game; head-canon is different) for two games straight. And if it doesn't happen, there's always the imagination, a Word document, and a keyboard to set everything straight (hurr hurr). Anyways, on that subject I keep my expectations low, just because Joker's mainly given off the impression of being straight. I don't argue with that point.

After sailing a little I could quite picture Joker sailing and being really good at it. Trimming the sails and knowing exactly how to adjust them, when to let go a little. Planning out when to tack or just how close you can go near an island and not get stuck without wind ( I always go too close). Jupp, I could see him doing that. But I don't know if the jumping back and forth when tacking would be good for him. Hmm... what do you guys think that he would do for fun if he wasn't flying Normandy. Or what do you imagine that he would like?

Welcome back - it sounds as if you had a great holiday
We only see Joker sitting in the cockpit - I was already wondering how often he would leave this place and where he sleeps and we had some time ago the question in the ME2 thread if there was a co-pilot or some kind of backup for him because even Joker has to sleep sometimes...
But in his free time I can see him watching vids (sports, music videos, action movies...), listening to music, playing online poker, surfing in the intranet and reading technical e-books and maybe historical/adventure stories.... oh, and spying on the crew of course

As for what Joker does in his off time... that's a good question. I like the idea of him taking up the hobby of model ships in Tiger By My Side. Everybody needs a hobby. EDI's comments suggest that he spends time browsing the net. In my head he likes to play games on his omni-tool.
I would hope that he has some sort of relief for his shift, but I can see him being hesitant about handing over piloting duty to anyone since he's so possessive of "his baby". Still, he's gotta sleep some time and the crew quarters would be the likely spot. I imagine him sleeping there grudgingly, though, since who would want to share a room with ten (or however many) people when they prefer solitude.

I can also see him sailing, funny enough - like it was something he and his father did to get him out of the house.
As for Joker being gay, straight or bi, I wouldn't mind either way. I'd be a little upset of Joker was only available for M!Shep's though. :\\ Watch BioWare make Joker the first and only gay option. Epic troll by BioWare.
