I didn't really consider having my Shepard get involved with anyone until I saw her in the game and was like "Whoa where did this character come from?" That was...a few years ago now. I remember doing all these playthroughs to get my Shepard up to level sixty in ME1. No romance. Just straight through.
Then he found someone as crazy as he is. So it all worked out in the end. At least he has someone to go back to after the war. He didn't have a family.

An even better question would be why did TIM spare no expense in building his army of cyber deathninjas and then decide to skimp at the last minute by giving them all dollar-store knockoff swords?Dr. Doctor wrote...
One thing that confuses me is if TIM's sparing no expense to turn his secretarial pool and the office dullard into a troupe of space ninja/ballerina hybrids why not just integrate the swords into their cybernetic arms Adam Jensen style? It sure beats having to worry about being disarmed.

A monomolecular edge is absurdly hard to reliably maintain. The Omni-Blade functions by flash-forging a monomolecular wire that's suspended in a mass effect field in a manner similar to the monomolecular blades in Larry Niven's Known Space novels or the Dragon's Tooth sword in Deus Ex.
If you wanted to make a conventional sword similar to what Kai Leng and the Phantoms use you'd need to use a material like obsidian or high-perfomance ceramic. Such a weapon would require constant honing (most likely handled by systems located in a sheath) and would be very fragile if anywhere other than the edge came in contact with an opponent.
