Because none of these complaints pack any punch. The chemical changes are a side effect, not the primary means of inducing damage.
And just because chemical changes in cooking are harmless doesn't mean other chemical reactions aren't incredibly dangerous. There is indeed a threshold, and even if their wasn't, I'm not sure how that would matter.
