Well, when we first meet her, she's the head of a science team, so it's not that big of stretch tbh. Many of the science officers in Trek are humans, not robots, and they are basically the head of the ship's science team.
Mordin's most likely a temp in ME3, one of the possible scenarios with Miranda that I'd like to see is her being the science officer aboard the Normandy, and she'd be available as a squadmate only in Cerberus related missions, if she's dead they can replace her with someone like Kahlee Sanders or something.
That way she can have more screen-time and enough interaction while still contributing actively to the war.
Edit: and no she wasn't just an overseer in Lazarus, the logs you see when you first wake up are more than enough of a confirmation of her intellect.

At most I suppose you could argue that she is just better at handling a crisis situation than Wilson, who is panicking. But she's correcting his readings and telling him what to do, so at the very least she has a thorough understanding of the scientific and medical aspects of the project.

VS is a Spectre and CO of the Normandy.
Miranda and Jacob can have a Cerberus arc.
Tali can take the quarian arc (if she isnt exiled).
We already know something about Thane and the hanars.

I think you're reading too much into what it could mean. The LI label is given to someone simply because that's what they are to Shepard, a love interest.Skullheart wrote...
The LI status don't get applied to every character. By example Jack and Garrus are LIs but they don't have a backstory that could help Shepard.

There's only two character besides Miranda that can take the scientist officer role.
Mordin
is already commited with the genophage, but he could still take care of
both jobs. The other is Kahlee Sanders, but I'm not so sure.

I think Grunt's always been pretty unlikely. Most basic reason is there just isn't any story potential there. He's become a full-fledged Krogan, so now he gets to kick some Reaper butt and that's all there is to it, really. Then we have Vega as the new tank. And a dev comment that "Grunt has his moments, and they are awesome," which basically amounts to saying, "he's a temp, but it's really cool," which is naturally what they'll aim for with all the temp squad members.
