He added: "It wasn't in the game because we didn't know there was such a huge demand for it, to be honest with you."

No, they didn't know there would be a huge demand for it. That's why they made sure to mention the closure, variety and personal appeal of the endings in all their marketing speak before the game. They had no idea people would actually want them to deliver on that <_<
I still don't know how they're gonna do it. How do you explain the Normandy scene? My personal feeling is the more they go into it, the more they realize how messed up this really is. It is my belief that Walters wanted to nuke the universe.
He lets things slip before release like the galaxy will be a wasteland so there can't be DLC. Also saying about the Citadel, "A few manage to get out but for most, bad times". Then he decides to put EDI and Joker together on an island to complete his whole galaxy is reborn theme.
That said, I honestly don't think they have the resources to do a whole new set of endings so this is what they are trying to do. Problem is I think they will quickly realize a few cinematics and a couple epilogue slides cannot fix this.
There is no way to explain the Normandy scene. It is impossible. They need to take it out.
