In Mass Effect 1, at the final romance scene, if you reject sleeping with Kaidan, does that turn his romance flags off for Mass Effect 2?
Or is it simply an... alternative path for the romance?

No, it doesn't unflag anything. You just decide it's not the best time to do the deed.

Very timely! Just a couple missions away from Ilos on my first lvl 60 sentinel Shepard following the Kaidan romance path. Kept neutral with Liara and got no questioning about my relationship with her from Kaidan.  Will make a save before leaving for Ilos and make a playthrough of that route of waiting. Loyal ME2 playthoughs afterwards, hopefully, will be suitably dramatic/romantic with Kaidan in ME3.  Thanks, both of you!

Yup. That's why I think he doesn't drink, but on the very rare occasions he does and gets drunk, he transforms into party animal

Just noticed something for the first time while replaying ME1. Like, this just happened. I'm doing all of the sidequests, go to do the one for the Consort, and Shai'ira's all "It's my job to know when important people arrive on the Citadel, many of them become clients", and Kaidan got this look on his face and was all "Yeah, well, you wanted to speak to the Commander?", and I was all O_O. What I'm trying to get at here is that I think Kaidan spent some time with the Consort. At least I feel like the game is strongly implying that. :I

Now I don't feel so bad when I take her "gift" every time. XD

Ah, really?  I know that I read about some special dialogue involving the sidequest, in fact, it was probably somewhere in this thread.  I just didn't know how to trigger it exactly, and thought that maybe it would only come up after the locker scene, where the romance can be flagged as a romance.  I guess I was interpreting the derpy look on his face the wrong way.

As for Kaidan drinking, I think he does occasionally. Just to loosen up. He strikes me as the type who when buzzed puts his arm around you, strokes your hair, and whispers in your ear.  You know, a horny drunk.

Yes. Kaidan, Ash and Liara all have a special line of dialogue in that scene if Shepard is in a romance with either of them.

After you renegade Kaidan, if you take Paragon-options in the conversation after Virmire (I'm there right now) there appears a blue persuasion on the left side... am I UN-renegading him right now? oO Or is it just part of the conversation?
