If they dont do it right away, they would probaly do it within the next maybe 5 or more years. than retire after helping with the rebuilding efforts.

I think they'd both take extended time off after ME3, but Ash would likely stay in for awhile. Her career was stalled all but a few years ago, and now she's making progress. Shep wouldn't want her to quit, and I doubt she'd want it either..
My own Shepard is more of a curious case. He's really tired of war and all the crap he had to go through rallying the galaxy to fight the Reapers. He's also seriously injured, and needs time to heal and rest. So, at least an extended vacation. He'll eventually want to serve the public again, but I suspect he'll want to do so in more of a diplomatic role. That might mean staying in the military, or it might not. Either way, he's looking forward to helping to build things and bring people together instead of shooting things and blowing them up.
I think Ash will eventually want to have a family, as well, so that will impact the decisions they make about military life.

Also, what kind of mess would the Human media get thrown into if humanity's greatest F-up family, the Williamses, merged via marriage with the family of galactic saviors, the Shepards. Heads would explode!

Yeah, Ash strikes me as someone who is hostile towards the press. The moment that camera turned towards Ash, she'd say "Get that camera out of my face", shoot the camera, and then subdue Al-Jilani.
