My perfect moment to catch up would still be the hunting scenario, just Shep and Ash, though the prey will probably most likely be Husks or Geth ot Cerberus troops, with a nice improvised picnic (and maybe a tumble in the grass.) I really can't imagine them having the classic romantic dinner scenario, no matter how hard I try, even if they weren't at war.

I almost always vote for more options, if they don't take away from other, more important things.
And actual wedding scene might be bit much, though maybe as DLC ;-) but at least the opportunity to talk about marriage, like with Liara.
As for my main ManShep and Ashley, I picture them living like Grissom when they are old, very reclusive, fighting off curious people and they are not really sure, if they have a marriage license in a drawer somewhere or not, a couple of kids running around the Galaxy with very diverse talents. But it'll still be along time before they retire.
One of my other Shepards is planning to take Ashley to Horizon to nuke that stupid place for their honeymoon, so he seems intend on marrying her at some point. Or he might have the ceremony there, to give a more positive meaning to the place, depending on how his temper develops in the future.
As for changes, they will make for Ashley: I really don't like to think about it in detail, because the thing I look forward to the most, right after having her back, is getting to know her again as unbiased as possible. But with everything that has happened after the defeat of Sovereign it would be unrealistic to expect her to remain unchanged.
